1Season the steak lightly with fajita seasoning.
2Sear steak on both sides for 4 minutes per side (to cook well done, after searing bake steak in oven for 10 minutes on 350˚), once done cooking, let steak rest for 10 minutes, then slice into 1/4 slices
3Return pan used to cook steak to medium-high heat. Add sliced vegetables. Cook undisturbed until slightly charred, 2-3 minutes. Remove from heat and mix with remaining seasoning and pinch of salt and pepper.
4Remove from heat and serve with steak, tortillas, cheese and sour cream.
