Flank Steak with Marinated Mushrooms and Sweet Potato Hash

1Preheat oven to 350. Dice sweet potato and Idaho potato, transfer to a large bowl. Combine potatoes, salt, pepper, and olive oil, mix well. Transfer to a baking sheet and bake for 20 minutes or until tender.
2In a large bowl add mushrooms, parsley garlic, soy sauce, balsamic vinegar, and red pepper. Mix well, add salt and pepper to taste. Transfer to a baking sheet bake for 10 minutes or until tender.
3Season both sides of the steak with salt and pepper. Put frying pan over medium high heat, add 2 tablespoons of olive oil and heat until shimmering. Add steak to the pan, cook for 3-4 minutes per side, to an internal temperature of 130-135 degrees for medium rare. Let rest for 5 minutes, slice as desired.
