2Peel and chop sweet potato into 1/4" sticks.Toss chopped sweet potato with 1 Tbsp. olive oil, salt and pepper. Place in single layer on baking sheet. Roast 12-15 minutes in oven. Remove from oven, flip fries and roast 12-15 more minutes.
3Heat grill or grill pan over medium-high heat. Add 1 tsp. olive oil and burgers. Cook burgers 4-5 minutes per side, or until minimum internal temperature of 160 degrees is reached. Cut into burgers to ensure cooked to preference.
4Toast buns. Place bottom bun on plate.Top with burger, pimento cheese and top bun. Place a serving of collard slaw and sweet potato fries on plate.
