One Pan CBG (Chicken, Bacon & Green Beans)

Directions

1Heat a large non-stick skillet over medium heat. Add the bacon and cook until crisp. Remove bacon pieces and set aside on paper towel lined plate. Discard bacon grease, leaving only a thin coating on pan.

2Season chicken pieces with salt and pepper and add to skillet. Cook until done- about 4 minutes per side -- and set aside on plate.

3Add shallots to skillet and saute for 1 minute. Add garlic and saute 30 seconds more. Add broth and thyme and stir.

4Add green beans and increase heat to medium-high, cook for about 8 minutes, stirring occasionally, until green beans are tender and sauce has reduced.

5Add chicken to skillet and coat with sauce. Transfer to serving dish and top with bacon.

Ingredients

6 Strips bacon, chopped

1 lb Boneless, skinless chicken breasts (cut lengthwise into thin strips)

2 tbsp Shallot, minced

2 Cloves garlic, minced

1 1/4 cup Low sodium chicken broth

1 tsp  Fresh thyme, chopped

8 oz. French green beans
