Instant Pot Chicken Cacciatore

1Season chicken with salt and pepper on both sides.

2Press “Sauté” on the Instant Pot. Lightly spray with oil and brown chicken on both sides for a few minutes. Set aside.

3Spray with a little more oil and add onions and peppers. Sauté until softened and golden, about 5 minutes.

4Pour tomatoes over the chicken and vegetables. Add oregano, bay leaf, salt and pepper. Give it a quick stir and cover.

5Cook on high pressure for 25 minutes. Allow the pressure to release on its own.

6Remove the bay leaf and garnish with pasta.

7Serve as desired.


4 Skinless Chicken Thighs

14 oz. Crushed Tomatoes

1/2 cup Diced Onion

1/4 cup Diced Red Bell Pepper

1/2 cup Diced Green Bell Pepper

1/2 tsp Dried Oregano

1 Bay Leaf

2 tbsp Dried Basil for garnish
